Handpicked Perfection
Our Salt Pond Roast features beans from the Boqueroncito Farm in Guatemala, nestled in the northern reaches of Huehue at the border with Chiapas, Mexico. Under the careful watch of the Villatoro family, with Aurelio Villatoro overseeing the wet mill and his nephew Antonio tending to the farm, each bean is meticulously handpicked and processed. This meticulous approach ensures a taste profile that is both distinctive and delightful.

This is a great little medium roast that is quickly becoming my goto for ristretto shots. The rich, complex flavors really shine when pulled as a short shot. Really good balance of sweetness, acidity, and body. It's smooth and velvety with a hint of caramel and nutty undertones. Also works good in milk based drinks as the flavors do not get lost when making caps and cortados.
